9 Bean Soup

• 9 cups beans, different varieties
• 4 oz ham
• 1 large onion, chopped
• 1 clove garlic, minced
• 1 can (28 oz) whole tomatoes, chopped
• 1 can (16 oz) tomatoes and green chilies, chopped
• seasonings to taste

Cover beans with water and soak overnight. Drain and rinse beans and put in a large pot with ham. Add the onion, garlic, and seasonings to taste. Cook 3-4 hours or in a crock pot all day. Add the tomatoes and green chilies and cook 30 to 40 minutes longer. Makes 9 servings.
