Apple Pancakes

• 1 cup all-purpose flour
• 1/4 cup soy flour
• 3 tbsp sugar
• 1/2 tsp cinnamon
• 1/4 tsp nutmeg
• 1/8 tsp salt
• 2 tsp baking powder
• 1 1/4 cup soy milk (beverage)
• 1/4 cup (2 oz) egg substitute
• 1 tsp vanilla extract
• 1 tart apple peeled, cored, and grated

Mix the first 7 dry ingredients. In a separate bowl, blend together the milk, egg substitute, and vanilla extract. Pour liquid ingredients over dry ingredients and blend together. Fold in the apples. Spray griddle or skillet with canola cooking spray and heat. Pour 1/4 cupfuls of batter onto medium-hot griddle. Heat for 2 minutes or until bubbles appear on surface. Flip and cook for another minute or until heated through. Served topped with applesauce and maple syrup. Makes 12 pancakes to serve 4.
