Banana Bread

• Egg substitute equal to 2 eggs
• 1/2 cup sugar
• 2/3 cup low-fat cottage cheese
• 1/3 cup honey
• 1 teaspoon vanilla
• 1-1/2 cups mashes, very ripe bananas (about 4)
• 2-1/4 cups whole-wheat flour
• 1-1/2 teaspoons baking powder
• 1 teaspoon baking soda
• 1/2 teaspoon ground cinnamon if desired

Preheat oven to 350 F. Grease 9" x 5" loaf pan. In a large bowl, beat the egg substitute until light. Add sugar, the cottage cheese, honey and vanilla; beat again. Add bananas; blend well. In a medium bowl, combing flour, baking powder, baking soda and cinnamon. Add the flour mixture to the egg mixture; stir just until combined. Pour into greased loaf pan. Bake 1 to 1 ¼ hours to until a wooden pick inserted in the middle comes out clean. Let cool in a pan for about 10 minutes. Turn out on a wire rack; cool completely. Make one large loaf or about 20 slices.
