Chocolate Chip Oat Cookies

• 3 egg whites, lightly beaten
• 1/2 cup brown sugar
• 1/2 cup granulated sugar
• 2 tsp vanilla
• 1/3 cup soy nut butter
• 2 medium bananas mashed
• 1-1/2 cups flour
• 1/2 cup soy flour
• 1-1/2 tsp baking powder
• 1/2 cup soy milk
• 1-1/2 cups dry oatmeal
• 1 pkg chocolate chips

Preheat oven to 375 F. In large bowl, beat together egg whites, brown sugar, granulated sugar, vanilla, soy nut butter and bananas. Sift together flour, soy flour, and baking powder. Stir about half of the mixture into the banana mixture, then stir in the soy milk, and then mix in the rest of the flour mixture. Stir in the oats and chocolate chips. Drop the dough by teaspoonfuls about 1-1/2" apart on nonstick or lightly greased cookie sheets. Bake at 375 F for 10 to 12 minutes or until lightly browned. Remove cookies and cool on wire rack. Makes about 5 dozen.
