Cottage Cheese Cookies

• 1 cup whole wheat flour
• 1/4 cup bran flakes
• 1/4 cup nonfat dry milk
• 1/4 cup toasted wheat germ
• 2 tsp baking powder
• 1 tsp cinnamon
• 1/4 tsp nutmeg
• 1/4 tsp salt (if desired)
• 1/2 cup raisins
• 1/4 cup margarine, softened
• 1/2 cup low fat cottage cheese
• 1/4 cup sugar
• 2 Tbsp honey
• 1/4 cup egg substitute
• 1 tsp vanilla

In a small bowl combine the dry ingredients and raisin. Set mixture aside. In a large mixing bowl, beat margarine and cottage cheese until smooth. Add sugar and honey and beat until fluffly. Add egg substitute, vanilla and beat again. Gradually stir dry ingredients into liquid ingredients until just blended. Place rounded teaspoonfuls of batter about 2 inches apart on greased cookie sheets. Bake in a preheated 350 F oven for 10 minutes, or until edges of cookie are golden. Remove from pan and allow to cool on rack. Makes 3 dozen cookies.
