Hash Brown Potatoes

• 1 large potato
• 2 tablespoons diced onion
• Salt to taste
• Pepper to taste

Cut potato into cubes. Cook in boiling water in a medium saucepan until tender; drain. Spray a medium skillet with nonstick vegetable coating. Sauté onion in vegetable spray over medium heat until soft. Add potato cubes; cook until browned. Add salt and pepper to taste. Makes 2 servings.
