Marinara Sauce

• Olive oil, or canola oil-flavored cooking spray
• 1 cup sweet red pepper, chopped
• 1 medium onion, chopped (1/2 cup)
• 2 tbsp chopped fresh parsley (optional)
• 1 clove garlic, minced
• 1 29-oz can tomato sauce
• 1 14-1/2 oz can Italian-stewed tomatoes, chopped, undrained
• 1 tsp sugar
• 1/2 tsp dried oregano leaves
• 1/2 tsp dried basil leaves
• 1/2 tsp dried thyme leaves
• 1/4 tsp salt
• 1/4 tsp black pepper, ground
• 8 scoops (4 oz) soy nutritious food ingredient*
• Pasta to serve

Coat a small saucepan with cooking spray. Combine pepper, onion, parsley, and garlic in saucepan; spray vegetables with cooking spray. Cook with medium heat until onion is tender, stirring frequently. Stir in next 8 ingredients; bring to a boil. Reduce heat to low, cover, and simmer 20 minutes. Remove from heat; stir in soy food ingredient. Serve over the pasta of your choice. Serves 4.
