Soy Good Pizza

• 1 cup textured soy protein hydrated with 1 cup boiling water
• 1 28-oz Italian-style tomato puree
• 2 tsp finely chopped hot chili peppers
• 2 cloves garlic, minced
• 1 tsp black pepper
• 1 bay leaf
• 1 refrigerated pizza crust

Hydrate soy protein and set aside. Combine all ingredients except pizza dough into 3-quart saucepan, cover, and bring to a boil. Uncover, lower the heat, and simmer for 30 minutes, stirring occasionally. On a pizza tin, roll out dough as directed on package. Spoon the sauce over the pizza dough. Bake at 450F for 15 minutes or until crust is brown or crispy. (You may need to modify baking time according to instructions on pizza crust package. Serves 8.
