Soy-Good Chocolate Pudding

Shell
• 1/3 cup honey
• 1/4 cup cocoa powder
• 1 1/2 tsp vanilla
• 1 10-1/4 oz package low-fat, silken tofu, drained

Heat honey for 90 seconds in microwave. Pour over cocoa powder; add vanilla. Stir until smooth. Blend tofu until soft. Add chocolate mixture and continue blending for 1 minute. Chill for at least 1 hour. Serves 5.
