Spice Drop Cookies

• 1 cup brown sugar
• 1/4 cup soy oil
• 1 jar (2.5 oz) prune baby-food or 1/4 cup puree
• 2 egg whites
• 1/2 cup applesauce
• 1 tsp vanilla
• 1 cup cooked soybeans, rinsed, drained and mashed
• 2 cups flour
• 2 tsp baking powder
• 1 tsp cinnamon
• 1/2 tsp nutmeg
• 1/4 tsp cloves
• 1/4 tsp ginger
• 1 cup oats
• 1 cup raisins

Preheat oven to 375 F. Combine brown sugar, oil, prune babyfood, egg whites, applesauce, and vanilla in a large bowl. Beat together will with an electric mixer. Beat in the mashed soybeans. In a medium mixing bowl, sift together the flour, baking powder, cinnamon, nutmeg cloves, and ginger. Stir them into the soybean mixture. Stir the oats and raisins in. Drop dough by rounded teaspoonfuls onto a nonstick baking sheet. Bake at 375 F for 10 minutes, or until golden brown. Makes 5 dozen cookies.
