Summer Mixed Greens

• 8 cups packed mixed greens, coarsely chopped (spinach, kale, mustard, turnip, etc.)
• 2 tsp olive oil
• 1/2 cup onion, finely chopped
• 1/2 cup celery, finely chopped
• 1 clove garlic, minced
• 1 tbsp cider vinegar
• 1/2 tsp red pepper flakes
• 1/2 tsp salt
• 2 cups water

Clean and wash greens; drain thoroughly. Heat oil in a slow cooker over medium heat. Add onions, celery, and garlic and cook for 5 minutes, stirring occasionally. Stir in the greens; cover and cook for 10 minutes until greens are wilted, stirring occasionally. Add vinegar, pepper flakes, and salt; cover and cook for 5 minutes. Add 2 cups water, cover, and simmer for 2 hours, adding more water if necessary. Serve with additional vinegar if desired. Serves 6.
