Tofu Sweet Potato Bake

• 1 10-1/4 oz carton silken (low-fat) tofu
• 1 15-oz can sweet potatoes
• 2 tbsp brown sugar
• 1/4 tsp salt
• 1 tsp cinnamon
• 1/8 tsp ginger

Add all ingredients to a blender and blend until smooth. Pour into casserole dish and bake for 20 minutes at 350F in preheated oven. Serves 6.
