Vegetable Soup

• 4 oz cubed roast beef
• 4 cups tomato juice
• 2 cups diced cooked potato
• 2 Tbsp chopped raw onion
• 2 cups green beans
• 1-1/2 cups cooked carrots
• 1 bay leaf
• salt and pepper to taste

Combine above ingredients. Heat throughly. Cover and simmer 15 minutes. Makes 4 servings.

Exchanges per serving: 1 protein, 4 vegetables, 1 starch
