Vegetarian Sandwich Filling

• 1/2 cup canned corn
• 1/2 cup diced tomatoes
• 1/3 cup diced onion
• 1/2 cup fresh broccoli, diced
• 1/2 cup fresh carrots, diced
• 1/2 cup fresh cauliflower, diced
• 1/2 tsp salt
• 1/2 tsp dill weed
• 1/2 tsp oregano
• 1/4 cup low calorie 1000 Island dressing

Mix all ingredients together. Chill. Use in a pita pocket for a high fiber sandwich. Makes 3 cups.

Exchanges per serving:  2 vegetables, 1/2 fat
