Vegetarian Tacos

• 1 cup textured soy protein
• 1 cup boiling water
• 1 package (4 oz) taco seasoning
• 12 oz vegetarian refried beans
• 12 taco shells baked
• 1 cup (4 oz) fat-free cheddar cheese
• 1 medium tomato, chopped (1/2 cup)
• 1 medium onion, chopped (1/2 cup)
• 1/2 cup lettuce, shredded
• Taco sauce, as desired

Place soy protein in mixing bowl and add boiling water; mix in taco seasoning. Heat taco mixture, beans, and taco shells. Spread taco mixture, beans, cheese, tomatoes, onions, and lettuce in taco shell. Add taco sauce, as desired. Serves 6.
