Super-Easy Your-Choice Muffins

• 1 7-oz package muffin mix (banana nut, blueberry, blackberry, oat bran, etc.)
• 1/3 cup soy flour
• 1/2 cup (4 oz) unflavored soy milk (beverage)

Spray muffin tin with canola cooking spray. Mix muffin mix and flour. Add soy milk and stir until dry ingredients are moist; do not over-mix. Fill 6 muffin tins about 2/3 full. Bake for 10 to 12 minutes at 375 F in a preheated oven or as instructed on the package until muffins are lightly brown or spring back when touched. Makes 6 muffins.
